I had big plans to recreate the two Northstar burgers I had last weekend while in Columbus, but…things did not work out.
Rather than follow my own recipe for imitation Northstar burgers from last year – which turned out great! I decided to make up a whole new recipe. Bad idea.
Here is what it should look like….
And this is what happened last night.
There were a lot of things that went into this brown, unappetizing patty and lucky for me – it ended up tasting great. It did not, however, taste like a Northstar burger, nor did it appeal to anyone’s sense of sight.
It does not even deserve the title of “attempted NS burger” therefore I will just call it a delicious yet ugly, black bean burger.
Black Bean Burger
- 1 1/3 c. brown rice + 1/3 c. brown rice
- 1/2 c. roasted butternut squash cubes
- 1 2/3 c. black beans + 1/3 c. black beans
- 1 1/3 c. diced beets + 1/3 c. diced beets
- 2 T. chopped parsley
- 1/4 onion, diced
- salt and pepper
- 2 T. whole wheat flour
- 1 T. apple cider vinegar
- 1/2 T. soy sauce
- In a food processor, chop parsley and onion until finely diced.
- In a separate bowl, mix 1/3 of each black beans, rice, beets and set aside.
- Add the rest of the black beans, squash, rice, beets and chop/mix until blended – but not too creamy.
- Pulse in the flour, vinegar and soy sauce and salt and pepper.
- Add/Stir in the leftover rice, beans and beets.
- Bake at 425 for about 20 minutes until mixture bakes into a patty.
- Serve with lettuce, tomato, pickles, spicy mustard and ketchup.

Sometimes the ugliest things are the best-tasting. And honestly, this black bean burger still photographs pretty well!
