Check out the Pre Feast Post from yesterday for the start of the Rib Cook Off.

Once the ribs are turned in – by 6:00pm sharp – they are cut into small portions of 1 – 2 ribs.

Each team is given a secret letter and a pan with their ribs for people to taste.

Each pan also has a bowl of sauce for those people who are not into the meat or just for extra sauce.

Then, once everything is set, people are called into the kitchen to take their sample.

Usually Brady, my brother, Linds and I share a plate of sauce and meat. I taste all of the sauces and make my decision on that. It helps to be able to taste the sauce and the ribs though too.

Once you taste, you vote. Each person votes for their 1st, 2nd and 3rd choices without knowing who’s ribs were who’s.

When you are done with your ribs or sauce you can head over to fill up your plate again with sides and desserts!
