Coconut butter.  Where have you been all my life?  

Coconut has been a growing food trend as of lately because of recent studies.  Coconut oil used to get a bad rap because it was often chemically changed and treated which made it full of trans fats.  In the natural state, scientists are realizing it’s not so bad for you. 

So why not spread it, drip it and flake it on your morning oatmeal or a warm pieces of toast.

Coconut butter is simple to make.  It only involves 1 ingredient.  

Organic Shredded Coconut

 2 c. coconut

1-2 T. coconut oil (optional)

  1.   Blend the coconut flakes in your food processor. It will take 4-6 minutes to start blending all together. 
  2. Keep blending until butter texture or add 1-2 T. coconut oil to smooth it out. 
  3. Continue stopping food processor to push coconut down. 

 * To soften, place your glass jar in a bowl of hot water, until liquidish.
