Lunch, around noon, consisted of a veggie-filled tuna salad on a Flat Out multi-grain wrap. I wasn’t starving for lunch but I knew I needed to eat because I was headed to the gym, then the mall then the grocery store. I decided to put any veggies we had in the fridge into my tuna (white albacore). The veggies consisted of: red and yellow peppers, cucs, sugar snap peas, tomatoes, celery and dill pickles. I gave the salad a squirt of Miracle Whip Light and spicy mustard. It didn’t need much because there were so many flavors. I was going to eat it as lettuce wraps but decided there were plenty of veggies in it and I needed some carb, so I went with the wrap. Because I wasn’t starving, I only used 1/2.
Oh yeah, and I also added some arugula to the wrap for a peppery flavor! It was wonderful, summery and very easy to make. I plan on taking it for lunch once school starts.
I needed some thing sweet after that so I put together the rest of my banana from breakfast, some strawberries about to go bad and a tiny spoon of almond butter. I love almond butter!
This was a great finish to my lunch!
I was going to post a pic of my snack (which I didn’t eat until around 4:40pm when I got home from shopping) but I realized the pics are basically the same as my lunch. I finished the rest of the tuna salad but this time without a wrap. I also had strawberries and almond butter but no banana.
Now I am off to make tacos, with Laura’s Lean Beef, for Brady’s fam!
