Tofu is a great inexpensive, healthy, vegetarian dinner option. If you are used to chicken and beef, give it a try with this recipe. It will make you a tofu lover.
Blistered Tofu
- 1 T rice vinegar
- 1 garlic clove, minced
- 2 t. grated fresh gingerroot
- 1 T. sesame oil
- 2 T. light sodium soy sauce
- 1 block of firm or extra firm tofu

Press the tofu in a tofu press or wrapped in a dishtowel and set under a few heavy cookbooks for 20-30 minutes or until water is mostly removed.

To make marinade, mix the ingredients in a bowl.

After tofu is pressed, cut the block into thin pieces.

Place pieces of tofu on a sprayed cookie sheet and cover both sides with marinade.

Preheat oven to 450 degrees.

Bake tofu about 10-15 minutes, or until it turns golden brown and develops a little crust. Flip at least twice to prevent burning.
