Another busy day with wedding preparations for Kevin and Linds’ big day coming up. Also, we are moving this weekend. We already moved a truck load of boxes from Columbus to Cleveland and are excited that we will be moving our furniture this weekend.
In between teaching spinning and making goodies for the wedding, I did have time to make a batch of “healthy” creamy mashed potatoes.
Garlic Infused Herb Mashed Red Skin Potatoes
- 1 small bag of red skin potatoes, washed and cut into pieces
- 3 cloves of fresh garlic, minced or pressed
- ½ cup of 1% cottage cheese
- ¼ cup of low-fat ricotta cheese
- 1 teaspoon butter
- 1 tsp. Garlic Wine seasoning
- 1 tsp. garlic salt
- a pinch of fresh herbs, basil, rosemary, and thyme
- 1 tsp. fresh pepper
- Place potato cubes in a small saucepan and cover with water. Add minced garlic to the potato water.
- Bring to a boil; cook until the potato is tender.
- Drain; add butter, cottage cheese, ricotta cheese, and seasonings.
- Mash with a potato masher to the desired consistency.
- Stir in herbs. Season with salt and freshly ground pepper.
