Another busy day with wedding preparations for Kevin and Linds’ big day coming up. Also, we are moving this weekend. We already moved a truck load of boxes from Columbus to Cleveland and are excited that we will be moving our furniture this weekend.

In between teaching spinning and making goodies for the wedding, I did have time to make a batch of “healthy” creamy mashed potatoes.

Garlic Infused Herb Mashed Red Skin Potatoes

  • 1 small bag of red skin potatoes, washed and cut into pieces
  • 3 cloves of fresh garlic, minced or pressed
  • ½ cup of 1% cottage cheese
  • ¼ cup of low-fat ricotta cheese
  • 1 teaspoon butter
  • 1 tsp. Garlic Wine seasoning
  • 1 tsp. garlic salt
  • a pinch of fresh herbs, basil, rosemary, and thyme
  • 1 tsp. fresh pepper
  1. Place potato cubes in a small saucepan and cover with water. Add minced garlic to the potato water.
  2. Bring to a boil; cook until the potato is tender.
  3. Drain; add butter, cottage cheese, ricotta cheese, and seasonings.
  4. Mash with a potato masher to the desired consistency.
  5. Stir in herbs. Season with salt and freshly ground pepper.
