After teaching my 8:30am spinning class yesterday morning, I cam home and jumped in the shower. I quickly got ready while Anna napped and then we headed out to meet Shannon (Daily Balance) and her little Bean for lunch at Taza.

We chatted away about everything from babies, to work, moves and blogs! By the time we left the restaurant, Anna had made quite the mess of Cheerios and bananas and her little man was hungry. I’m looking forward to another date soon!

On our way home, we stopped at Trader Joe’s for essentials that we have been missing (i.e. peanut butter). Then it was nap time again for little A. When Anna woke up, we headed up to play with Addie, Reagan and Xan because it was Addie’s 2nd b-day – her party is on Saturday!

Before we knew it, it was dinner time. I have been wanting to make Soba noodles for a while and never did it, so tonight was the night. Soba noodles are 100% buckwheat pasta and have 7g. of protein per serving. I didn’t plan ahead well enough to make the meal as good as I would have wanted – but it was a good start. Now I know what I want to add for next time.

This dish – which will reappear soon for a better Take 2 – was a combo of the following.

  • 2 serving of Soba noodles, cooked as directed
  • 1 can of water chestnuts
  • 1 orange pepper, chopped
  • 2 green onions, diced
  • 2/3 cup shredded carrots
  • 10 oz. sliced mushrooms, added after the picture
  • 1 cup of romaine, added after the picture

dressing

  • 1 T. EVOO
  • 1 T. sesame oil
  • 3 T. lime juice
  • 1 T. seasoned rice vinegar
  • 1 t. minced garlic
  • 3 T. TJ’s Soyaki sauce
  1. Make noodles as directed then let cool.
  2. Add pepper, water chestnuts, onions, carrots, and mushrooms to noodles.
  3. In the meantime, make dressing by combining the dressing ingredients and mixing together.
  4. If you want your noodles cold, add dressing and lettuce and eat!
  5. If you want your noodles warm, heat up the pot of noodles and veggies until warm. Add dressing and continue to heat until pasta is hot. Remove from the stove, add lettuce and serve!
  6. Enjoy with a glass of Riesling

After dinner we headed to our new house to meet Brady’s parents, Tyler and Cole! We are working on making a giant to-do list for the house today! Updates tonight!
