This slaw is delicious! Kathy made it for Lindsey and Kevin’s shower and Jill gave me the recipe! If you are having a cookout anytime soon – I suggest adding it to your menu, I am going to!

Cabbage and Corn Slaw with Cilantro and Orange Dressing

serves 8

  • 1/3 cup frozen orange juice concentrate
  • 1/3 cup unseasoned rice vinegar
  • 1/3 cup canola oil
  • 2 – 8oz. bags of cole slaw mix
  • 1 bag of frozen corn, thawed
  • 1/2 cup of matchstick carrots
  • 1 medium red bell pepper, stemmed, cored, cut into thin strips
  • 6 medium green onions, sliced thin
  • 1/2 cup cilantro, chopped
  1. Whisk orange juice concentrate, vinegar, and oil in a small bowl and season with salt and pepper. This can be done ahead of time.
  2. Combine slaw mix, corn, carrots, red pepper strips, sliced green onions and chopped cilantro in a large bowl.
  3. Toss with enough dressing to coat.
  4. Season with salt and pepper to taste.
  5. Let stand at least 15 minutes for flavors to blend.
  6. Toss again and serve.
