This slaw is delicious! Kathy made it for Lindsey and Kevin’s shower and Jill gave me the recipe! If you are having a cookout anytime soon – I suggest adding it to your menu, I am going to!
Cabbage and Corn Slaw with Cilantro and Orange Dressing
serves 8
- 1/3 cup frozen orange juice concentrate
- 1/3 cup unseasoned rice vinegar
- 1/3 cup canola oil
- 2 – 8oz. bags of cole slaw mix
- 1 bag of frozen corn, thawed
- 1/2 cup of matchstick carrots
- 1 medium red bell pepper, stemmed, cored, cut into thin strips
- 6 medium green onions, sliced thin
- 1/2 cup cilantro, chopped
- Whisk orange juice concentrate, vinegar, and oil in a small bowl and season with salt and pepper. This can be done ahead of time.
- Combine slaw mix, corn, carrots, red pepper strips, sliced green onions and chopped cilantro in a large bowl.
- Toss with enough dressing to coat.
- Season with salt and pepper to taste.
- Let stand at least 15 minutes for flavors to blend.
- Toss again and serve.
