Not only is daylight savings time messing with our sleep schedule, so are these molars Anna is getting. Luckily, she still wakes up happy and ready to read when morning comes, despite how many times she we were up in the night. This morning started the same as many. Anna emptied her book basket looking for the perfect book to read.

She is surprisingly good at reading upside down. She is a genius, I’m sure.

Then we proceeded to read all of the favorites in the basket:

  • Is Your Mama a Llama?
  • The Hungry Caterpillar
  • Where is Baby’s Bellybutton?
  • Snuggle Puppy
  • Moo, Baa, Lalala

Following story hour, we headed to the store. We got some stuff for dinner and other things we just needed at home – detergent, dishwasher soap, etc.

By the time we got home, it was just about lunch time. Anna did the usual – ate, slept and played while I met with Katie (Hallie’s sis in law) and we did some bridesmaid planning! (Hi Katie! It was so much fun to hang out!)

Before we knew it, it was time for me to teach spinning! I had a good turnout of chatty teens! They are a fun energetic group! I added some songs to the playlist so I will post an update tomorrow.

Until then – make this salad. It won’t disappoint. It only has 4 ingredients and tastes fresh and delicious!

Beet Green Salad

  • Greens (romaine, arugula, spinach, etc), cut for salad
  • Steamed beets (TJ’s has great ones) or you could use canned, diced
  • Goat Cheese crumbles
  • Toasted walnuts

* You can dress the salad with anything but it tastes great with balsamic vinegarette and a glass of Malbec

Anna loves beets! I would give them to her more often if they weren’t like giving her a permanent marker to rub on her clothes, drop on the floor and run on her face. 🙂
