This weekend has been busy with my cousin moving to Columbus! My aunt and uncle came down to move her in this weekend and we had a great time hanging out! I’ll fill you in more, but until then I wanted to share this tasty treat!
John and Ashley came over for dinner this week to celebrate Ashley’s bday! I made salmon, quinoa, broccoli and salad for dinner. While we ate, we sipped a little Pinot Noir. For dessert, I wanted to make something fun and not too bad for us! That is how I came up with this:
I made a chocolate cake with a can of pumpkin in place of oil and eggs. Then I topped it with a peanut flour frosting recipe that I created as I went.
We devoured it. It turned out moist (a little goey i the middle) and delicious!
- 1 chocolate cake mix
- 1 can of pumpkin
- 1 1/4 c. water
- 1 c. peanut flour
- 1/3 c. brown sugar
- 1/3 c, water (depending on how thick you want it – add more to reach your consistency)
- 1 tsp. salt
- peanuts to top
- Make the cake by mixing the cake mix with can of pumpkin and water.
- Place in a sprayed, round cake pan and bake at 350 for about 20-30 min. depending on the size of your pan.
- While the cake is baking, make the frosting. Mix the peanut flour, water, sugar and salt together until you have the consistency you like!
- When the cake is done (mine was really gooey in the middle but it’s ok because it has no eggs!) let it cool.
- Then top it with the frosting and enjoy!

I seriously LOVE gooey cake! And I haven’t really like the peanut flour yet, but maybe adding brown sugar would change my mind? I’m gonna have to try it!
