So Janelle (Brady’s sister) I have been on quite the lentil salad kick lately. This week when she came over for dinner we made up a new recipe! We based the recipe on what I had in my cupboar/freezer and it turned out really well!

  • 1 bag (1lb) lentils
  • 1 bag of frozen peppers and onions (or fresh would work!)
  • 1/2 c. matchstick carrots
  • 2 c. fresh spinach
  • 1 T. cumin
  • 2 T. lime juice
  • 2 T. EVOO
  • salt
  • pepper
  1. Simply make the lentils as directed.
  2. While they are simmering, place the peppers/onions in a pot on the stove and thaw/simmer until softened with a little water or EVOO
  3. Once peppers and onions are soft and lentil are cooked, put them in one big pot together.
  4. Stir in carrots and spinach.
  5. Make the dressing by combining cumin, EVOO, lime juice, salt & pepper (to taste).
  6. Stir dressing into the salad and serve warm or cold.
  7. Serve with fresh avocado to mix in
