So Janelle (Brady’s sister) I have been on quite the lentil salad kick lately. This week when she came over for dinner we made up a new recipe! We based the recipe on what I had in my cupboar/freezer and it turned out really well!
- 1 bag (1lb) lentils
- 1 bag of frozen peppers and onions (or fresh would work!)
- 1/2 c. matchstick carrots
- 2 c. fresh spinach
- 1 T. cumin
- 2 T. lime juice
- 2 T. EVOO
- salt
- pepper
- Simply make the lentils as directed.
- While they are simmering, place the peppers/onions in a pot on the stove and thaw/simmer until softened with a little water or EVOO
- Once peppers and onions are soft and lentil are cooked, put them in one big pot together.
- Stir in carrots and spinach.
- Make the dressing by combining cumin, EVOO, lime juice, salt & pepper (to taste).
- Stir dressing into the salad and serve warm or cold.
- Serve with fresh avocado to mix in
This looks SO GOOD! I love lentils and cumin is my favorite spice.
