The other part of our dinner from last night was chicken curry. This dish cooked on my stove for about an hour so it had the same effect as being in the slow cooker. The chicken fell apart the same way too. I somehow missed the picture of the new ancient grains mix that I served with the Indian dishes but it will be making other appearances so I will have time to show you it.

Simple Chicken Curry

  • chicken (I used all natural and I used about 3 lbs. – before trimming)
  • 1/2 can of coconut milk
  • 1 Tbsp. curry powder
  • 2 tsp. cumin
  • 1/2 bottle of Patak’s Rogan Josh Curry cooking sauce (or TJ’s Simmer Sauce)
  1. Trim the chicken and cut it into small pieces.
  2. Mix coconut milk, spices and sauce together in a pot.
  3. Add chicken and simmer on med-low heat for 45-60 minutes, until chicken falls apart. You can cook this longer if you’d like or cook it in a slow cooker to get the same effect.
  4. Enjoy!

I went with White tonight but everyone else went with Red! Have you tried Barefoot’s Pinot Noir (high class I know) I thought it was great for an inexpensive bottle.

I also cut up and shared some Pro Bars with John and Ash.

Both flavors were good but we like Art’s Original Blend a little better. I think the Cran-Lemon Twister would be perfect for morning because it had a great zesty fresh flavor! I also gave Ash some Fruition bars to try so I will be interested to see what she thinks! I love them!

Brady’s home from work today since it’s Veteran’s Day so I think there will be some practicing in Anna’s future…
