The reason we are in Myrtle (besides just for fun and sun) is because I am attending the AFPA Fitness Expo here! I am learning a ton of great information and getting recertified to teach group fitness classes! I have a lot I want to share with you!

Each day was broken down into 5 sessions and you had a choice of which seminars or workshops you wanted to attend. I found that all of them were full of valuable information! I am looking forward to sharing what I have learned!

After a 8-5 day of listening, thinking, and working out, I was exhausted. I came back to the condo where my mom and Anna were hanging out. They had had a great day of walking, shopping and napping and Anna was all smiles! Together we all walked on the beach while the sun was setting.

For dinner we decided to recreate Aladdin’s Mujadara Plate (our favorite dish)in a healthy way! Here is their description:

A bed of steamed lentils and rice topped with Lebanese Salata, and garnished with toasted onions.

By toasted…they mean fried.

So here is what we came up with, before I mixed it all together. Also, we added a few shrimp, it doesn’t come with it at Aladdins.

Mujudara Plate Creation

  • 1 bag dried lentils – cooked as directed
  • 2 servings – 1 cup – brown rice, cooked as directed
  • 1 zucchini, sliced thin
  • 1 small container of sliced mushrooms
  • 2 onions, sliced thin
  • 1 T. Good Seasons dressing
  • 1 c. lettuce
  • 1/2 c. feta cheese
  1. Cook lentils as directed. Set aside, but keep warm.
  2. Cook rice as directed. Set aside, but keep warm.
  3. Put dressing into a frying pan and heat. Add zucchini, mushrooms and onions.
  4. Stir fry veggies until they are soft and browned but not mushy.
  5. Mix lentils, rice and veggies together. Stir in lettuce!
  6. Enjoy with a glass of Pinot Grigio, on the balcony, if you can!
