This weekend I wanted to make something fun for dessert for our cookout on Sunday. I debated between many things but decided on ice cream sandwiches because we were heading to a baseball game after dinner.
Homemade Low -fat Ice Cream Cookie Sandwiches
- 1 pouch of cookie mix – any kind
- 1/2 c. unsweetened applesauce
- 2 egg whites
- 1 container vanilla (or any flavor) yogurt
- Make cookies using applesauce instead of oil and egg whites instead of eggs. Use a large cookie sheet to spread the dough thin instead of a 9×13. Bake for less time than directed.
- When the cookies are done, let them cool.
- Use a cookie cutter of your choice to cut the cookies out. You will need to 2 cookies per ice cream sandwich (duh, 🙂 )
- Put a big spoonful of softened yogurt onto the cookie and place the 2nd cookie on top.
- Wrap in plastic wrap and store in the freezer until ready to eat.
