I had a few requests for this recipe and since it is so easy and tasty I wanted to post it!!
I have to give credit to Brady’s dad for these. He always makes them for family parties and I love them! 🙂
Cucumber Sandwiches
- 1 or 2 (depending how many you need) cucumbers peeled and sliced
- 1 package of reduced fat cream cheese
- 1 packet of dry Hidden Valley Ranch salad dressing mix
- 1 pack whole grain or whole wheat pitas or flatbread
Mix the ranch and the cream cheese and let sit in the fridge if you have time. The flavor gets better after it sits together for a while. Then, just before serving, spread cream cheese mixture on small pita triangles and top with a cucumber slice.
See my little star sandwiches (on the top left corner)- I wanted to do them all like that but they wasted too much pita. Next time I will plan ahead and get two packs of pitas so I can make shapes!
These are my absolute favorite all the time for any reason. Cool and calming, they remind me of childhood and one day they will remind my girls of theirs too!
Those are cute (the star shape!) – you should use the left over from the cutout and make little pita chips 🙂
Love cucumber sandwiches. They are a super easy fall back for a “bring-a-dish” situation, afternoon tea, etc. Looks great.
