Today went pretty fast for being a Monday and a Thursday at school. It is soooo nice that tomorrow is the last day of the week! Thank goodness! I am ready for a break.

I worked out this morning so I wouldn’t have to bother with it this afternoon, which is always a good idea in my opinion. When I got home, I made a quick batch of pumpkin cupcakes. They are soo good! I had to try one!

Pumpkin Cupcakes

  • 1 box yellow cake mix
  • 1 cup pumpkin
  • 3 egg whites
  • splash of water
  • 1 tsp. + a little extra pumpkin pie spice

Mix all together and bake for 30 min. at 350. I also added pepitas before baking them! I am excited to bring them to school for a Thanksgiving treat!

Then for dinner (we have NO food, not even butter or any type or meat at all, we are even out of corn and black beans which I felt like we had a life supply of. A trip to the store is going to happen right after Thanksgiving!) I made crab cakes for Brady and I, but I wanted something else too.

I decided on leftover Gimme Lean Sausage with veggies and egg whites. I was planning on putting in a Flat Out wrap with some lettuce and cheese. Sounds good right?! Here is how it turned out:

It looks good, but it just did not do it for me. I ended up throwing it all away and eating cereal for dinner. Sometimes you just have to do that!
