After school today, I ran to the store because I needed to get a few things to make French Toast Strata for our school breakfast in the morning. Then I made the casserole before Brady and I took my car to get all new tires. We left it at the place and when we got home, I ran about 4.5 miles. We then went back to pick up my car. By the time I watered the plants and did things around the house, it was 8:30 and we had not eaten yet! Brady and I were both in the mood for something simple and easy. He opted for a pulled pork sandwhich (Costco’s pulled pork is actually pretty healthy, 3g fat and 150 cal. per serving. It’s not my thing, but at least it’s not too unhealthy for him.)
I decided on a few things because I could not narrow it down.
1. Spring greens salad with tomato, mozzarella and balsamic vinegrette
2. Broccoli with parm
3. Morningstar black bean burger
Dessert was a few little ramekins of Brady’s strawberry smoothie.
His super original recipe included: frozen berries, ice, skim milk and vanilla protein powder.
Yay! Tomorrow is Friday!!
