To start, I totally forgot to take a picture of my lunch!  It consisted of a large bowl of lettuce topped with a little shaved turkey, black beans, corn, tomatoes and salsa.  I covered the bowl with cumin, salt and pepper.  It was great and very filling!  I also had a 1/2 c. 0% greek yogurt from TJ’s, fresh peaches, and TJs fiber worms.  My 3pm snack was 100 cal. kettle corn! \

Onto dinner!  I ran about 4.5 miles after school and before dinner. My mom came in town today because my brother has been here while he has been working on a project in town, and she wanted to hang out!   When we finished with the physical activities we headed out on some errands.  My brother told us he needed to pick up some things for an event he was running tomorrow (part of the reason he is in town) he failed to mention that he was going to feed 800 people at this event!  Our little shopping trip turned into:

  • 800 hot dogs and hamburgers
  • 100 bags of buns
  • 10 jumbo ketchup and mustards
  • 2, 000 napkins
  • 1,000 paper plates
  • 20 cases of chips (each with 50 bags)

Needless to say, we did not have an once of room in the car!  I have pictures on my mom’s camera I will post! After the big picnic purchasing, we decided to go to Brio for dinner.

I got my favorite dish, Wood-grilled Salmon Salad. It included the following delicious items:

  • spring mix salad
  • salmon
  • feta
  • grilled asparagas
  • tomatoes
  • shoestring potatoes
  • balsamic dressing

This is served on a bed of salad with tomatoes and feta!  It was great and filling, I just wish I had eaten so much delicious bread!
