Today was busy, as usual! I went to the gym in the morning and then had a busy day at school. After school my girlfriend, Jen, and I worked on our cookie business website. I will post the link when it is done! We also walked for about 35 min. It was a perfect fall day in Central Ohio 🙂
For dinner I wanted something really easy because I was making my cupcakes and getting things ready for the party tomorrow! I threw this together and loved it! It literally took 15 min.
Tofu Asparagas Quinoa
- 1/2 c. quinoa cooked as usual
- 1/2 block of tofu
- bunch of fresh asparagas
Cooke the tofu in a skillet until browned with:
- soy sauce
- fresh garlic
- minced ginger from TJ’s
- salt and pepper
- sesame oil (just a dash)
- sesame seeds
Broil asparagas with salt and pepper and a little EVOO (I used PAM) until done.
Mix quinoa, tofu and cut up asparagas! Enjoy!
I am really loving tofu! It tastes so fresh!

This looks interesting…..I might like it. You’ll have to make it for me then teach me how to, if I like it. You know I’m not much at being a good experimenter with foods, but this has ingredients I like….maybe including the tofu!
