I can’t only be Tuesday. I feel it’s been a week since we were in Maryland and a month since we were in California, even though that is not the case.

Anna slept until after 8am this morning and then we took off so I could teach a morning interval class. After class we had a lunch date with Addie, Cindy and baby Emerson! Before we knew it, it was nap time for Anna and cook time for me.

I wasn’t sure exactly what I was going to make but I am happy things worked out the way they did. I ended up with a his and hers dinner of chicken and tofu, plus brown rice and broccoletti.

The chicken was marinated in a little Soyaki and some fresh ginger and garlic. To spice things up, I made a delicious sauce to go on the whole dinner.

Peanut Ginger Sauce

  • 2 T. low sodium soy sauce
  • 1 T. natural peanut butter
  • 1 tsp. natural tahini paste (ground sesame seeds)
  • 1/2 tsp. fresh pressed (minced) ginger
  • 1/2 tsp. fresh pressed garlic
  • 1 tsp. sesame oil – for flavor
  • 1 T. rice wine vinegar

Mix all together and serve over everything or eat with a spoon.

I think I doubled this recipe and added more of the same. I didn’t add more oil but the flavors were fantastic!

I could actually drink this stuff.

In fact, I might. Don’t dare me. I have eaten more than one serving of Arby’s sauce from the packet.

Side note: This broccolettii is organic and from Costco. It was so sweet and delicious I am tempted to go buy another bag tomorrow. I wasn’t thinking Anna would like it because she has not been a big fan of the greens lately, but she loved it. And I didn’t even give her any sauce. I know, I’m not nice, but I didn’t want to share!
