Who can believe that Thanksgiving is less than two weeks away? After a very productive 60* day, I can’t believe it. I ran outside with Kara, Brady grilled chicken for his lunch this week, we spray painted the peg board in the garage, re-arranged the basement, cleaned up the yard, hung a curtain rod and curtains, and went to family dinner. It got me excited about getting ready for the holidays and decorating the house!   

For family dinner, I made roasted butternut squash. My Aunt Sharon brought cheese potatoes and we had fresh cibatta bread.

My parent’s made a grilled feast to take advantage of the great weather.

Under the layers of grilled veggies (peppers, onions, cauliflower, asparagus, and mushrooms) was mojo pork tenderloin.

Mojo Pork Tenderloin Marinade

  • * 3 c. orange juice
  • * 1 c. lime juice
  • * 1/2 c. fresh cilantro
  • 1/3 c. EVOO
  • * salt and pepper
  • * 3 T. fresh chopped garlic
  • * 1 T. chopped oregano
  1. Rub the pork with garlic and salt and pepper.  
  2. Mix all the above ingredients together to make the marinade.
  3. Marinate the pork for at least a few hours.
  4. Grill the pork until it is cooked through.
  5. When it’s done, slice oranges and add to the tray.
  6. Pile the grilled veggies around the meat and top with the grilled onions.
