My alarm went off at 4:45 and I quickly changed and ran to the coffeemaker. After being properly fueled, I headed to teach NoLimits Cardio. A short hour later, I was on my way home so Brady could go to work. He left and Anna and I had our usual oatmeal date.
After we both changed clothes, we were off. I dropped Anna at my parent’s house to play with MImi while I went to teach Total Conditioning. Another quick but exhausting hour later, I was on my way home again. More sore. More tired. And much more hungry.
I was so happy to have the leftovers from the chili I made this weekend in my fridge. This vegan chili is packed with protein, and warm tomatoey goodness. I enjoyed a big bowl with avocado on top.
There are a lot of reasons I love this chili but I will just name a few:
1. It’s made in a Crock pot so it’s super easy
2. The leftovers are fantastic.
3. It’s low-fat but full of flavor.
4. It’s very filling.
5. It’s very versatile and would make a great topping to a salad, baked potato or even in a sandwich (think sloppy joe).
Black Bean Sweet Potato Chili (Vegan)
- 6-8 small peppers (tiny + sweet), diced
- 1 onion, diced
- 6 small sweet potatoes, peeled and diced
- 2 can of diced tomatoes with juice
- 1 packet of chili seasoning
- 1 can of drained black beans
- 1 1/2 cans of drained red beans
- 3 cans of water
- 1 T. chili seasoning
- 1/2 t. garlic salt
- 1/2 t. ground red pepper
- 1/3 c. whole wheat couscous
- salt and pepper
- In your slow cooker, combine all of the ingredients except the couscous. Allow to cook on high for 5-6 hours or until potato is all the way cooked.
- When there is about 1 hour left to cook, add the couscous. If the chili is already very thick you don’t need to add it, or you can add it with 1/2 c. water. I didn’t have the couscous in the recipe at first but I added it because I used 3 can of water and it was too soupy. I liked it though, so i would use it again!
Try it.
You could always add ground beef, turkey or chicken or you could toss in some Boca crumbles. It’s not really needed though. 🙂
