Where did the day go? It started this morning with two cozy girls coloring in their “offices”. Moving boxes make great offices.
Between then and dinner there was:
– a trip to the greenhouse to get some mums with a groupon my mom had given me.
– a trip to the park with other cousins Reagan and Alexander
– an afternoon nap for the little ladies
– a delicious lunch of peanut butter sandwiches, lentils and fresh peaches
– a spin class I taught
– a trip to Trader Joe’s
– some laundry
– a few cups of coffee
– some online toy shopping – you will see our newest purchase soon!
After spinning I came to this:
Anna happily eating a peach on the counter while Brady did one of his fantasy drafts.
After we changed her from her peach-juice covered jammies, I read her some stories and she was out!
Downstairs, I made dinner. It was simple, filling and warm – just what I needed.
Simply:
- Stir fry whatever veggies you have on hand – I used mushrooms, green beans, and summer squash.
- Add your favorite tomato sauce and a scoop of lentils from the ones you cooked earlier this week,(right, didn’t everyone cook a big batch of lentils on Monday?)
- Toss in a few thawed Meatless Meatballs from Trader Joe’s freezer section.
- Simmer together and serve with nutritional yeast sprinkled on top.
- And a few sugar cookies. Because you deserve them and they are delicious.
Bedtime.
