I was thinking about it yesterday, and I need to have a few menus prepared for the next few days. Does anyone have any ideas of great fall recipes for hosting guests?!
Friday Night in Fall Casual Dinner
*Tonight’s dinner will be for my parents and my cousins (they are married, not both my cousins 🙂 who are coming to my house for the weekend, and Brady’s parents who will come over and join us! This meal needs to be something that does not have a specific time for serving because I am not sure what time they will be here. I wanted it to be classic fall, with a healthy twist. Here is what I planned. Any ideas?
- Southwester Turkey Quinoa Chili – I made this last night, and it is amazing! I will post recipes and pics tonight
- Baked Potato Bar – with cheese, plain yogurt, salsa, chili (obv.) and bacon (for B.)
- Toss garden salad
- Homemade apple pie – I am going to make this after school today. I am going to try and make it crustless on the bottom and with a healthy crumble topping.
Saturday Lunch
* I am thinking just homemade subs and leftover chili?
Sunday Brunch
* I want something easy to just throw in the oven because we will doing things like shopping and getting my gardens ready for winter (my mom is going to be in charge of that project) because in the spring I want them to be ready to plant! I have not figured this one out yet so these are just ideas.
- Egg/egg white veggie strata
- Fruit salad
- Apple pancakes

We are having our pastor who married us and his wife over for dinner with Brady’s parents. I found this twice baked sweet potato recipe and might give it a try. For the meat, I was thinking some type of chicken. Again, any ideas?!
I always think of the big main chicken dishes when I’m having people over (although I don’t have any great “lower cal” versions of them) – what about chicken piccata, marsala, or kelly? Those are three of my favorites! Or you could do something like a “baked” chicken parmasean (sp?).
