We had so much great food, family and friends this weekend, it was unbelievable! On Sunday, after the 5-mile race and before the Rib-Cookoff (post to come!) we had lunch and watched Kevin and Linds open presents from the shower the night before. Anna loved it.
Dessert for Sunday lunch was strawberry pretzel salad that my Aunt Sharon made. I hadn’t had it in so long and forgot how good it is! Have you made this before?
Strawberry Pretzel Dessert
- 1 1/2 cups crushed pretzels
- 4 1/2 tablespoons sugar
- 1/2 cup butter, melted
- 1 cup sugar or stevia
- 2 (8 ounce) packages 1/3 less fat cream cheese
- 1 (8 ounce) container light frozen whipped topping, thawed
- 1 (6 ounce) package strawberry flavored gelatin
- 2 cups boiling water
- 1 (16 ounce) package frozen strawberries or fresh
- Preheat oven to 350*.
- Mix together the pretzels, 4 1/2 T. sugar and melted butter.
- Press into the bottom of a 9×13 inch pan. Bake for 10 minutes, or until lightly toasted. Set aside to cool completely.
- In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping.
- Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.
- In a medium bowl, stir together the jello mix and boiling water.
- Mix in frozen strawberries, and stir until thawed.
- Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.
