For Anna’s party we made homemade mac & cheese. It was creamy and tasted much more decedent than it was.
Homemade Mac & Cheeseadapted from Hoggy’s recipe
- 2 c. low fat cottage cheese (big container)
- 2 c. reduced fat sour cream (I use reduced fat)
- 2 eggs
- 1 bag of 2% sharp cheddar cheese, shredded (plus more for the top)
- 1 lb. cooked elbow macaroni ( Barilla Plus or whole wheat work great)
- salt and pepper
- Preheat oven to 375 degrees.
- Combine all ingredients.
- Transfer to a 13×9 inch baking dish.
- Bake until crusty and golden, about 40 minutes.
*This is a great food for kids and adults! You could always add in some broccoli, tofu or chicken to make it more of a full meal!
