Thank goodness for electricity! Katie, Sarah and I walked 4 miles before making dinner. I had tons of fresh veggies that I was excited to use so lettuce wraps were a perfect dinner choice. The pictures are not very pretty, but the dinner was great!
Lettuce Wraps
- 1 onion chopped/sliced
- 1 c. mushrooms chopped
- 2 c. zucchini chopped in a food processor
- 1 tbs. garlic (minced)
- 1 tsp. fresh ginger
- 1 tbs. szechaun seasoning
- 1 tbs. Asian Zing (BW3) seasoning
- some hoisin, soy and teryiaki splashes 🙂
- Chicken, shrimp or lean ground turkey
Cook the veggies and seasoning together until they are tender. While this is cooking, cook the chicken with similar seasonings. I usually use extra lean ground turkey, but shrimp would also work! When the meat and veggies are done, serve them with fresh lettuce cups! Brown rice is the perfect side for these because it goes well in the wrap as well!
