Here is a fun and super simple recipe for a festive dinner!
Italian Veggie Chicken
- chicken breast (trimmed and cut into small pieces – I used 5 breasts for Brady and our neighbors)
- 1 can of diced tomatoes (I used garlic and OO)
- 3 cups of fresh baby spinach
- 1 – 2 cups of frozen artichokes (Trader Joe’s ) *canned would also work
- 1 Tbsp. capers
- 2 Tbsp. minced garlic
- 2 Tbsp. EVOO
- 1/2 c. feta
- Cook chicken with 1 T. garlic, 1 T. EVOO and salt and pepper.
- In another pan, cook the other T EVOO, garlic, spinach, artichokes, capers, and diced tomatoes (in juice). Simmer together until spinach is wilted.
- Mix chicken in with veggies and simmer together (reserve some veggies if you don’t want to mix with chicken).
- Mix feta in while the dish is still warm.
- Serve on top of pasta!
- Enjoy the holidayish colored dish!
Pair with a glass of Chianti for another Italian treat!
