I started a new adventure in the world of Pampered Chef! Last night was my first “show” if you will. I invited a few neighbors over to have a glass of wine and be my first audience. We had a good time, despite a few beginner mishaps. Anna was upstairs with Brady and she was having trouble going to sleep, so I was totally distracted for a few minutes which may or may not have caused me to shoot a potato across my dining room. In the end though, the food turned out great and we had a good time chatting about food and cooking! It’s always good to learn with friends and neighbors! 🙂
Holiday Festive Layered Dip (makes 2 of the dips shown here)
- 2 blocks 1/3 less fat cream cheese
- 1 package of frozen spinach, thawed and squeezed until excess water is removed
- 1 4oz. container of feta
- 1 T. lemon juice
- 1/2 tsp. pepper
- 1 tsp. dried oregano
- 2 green onions, sliced thin
- 1 small jar roasted red peppers
- 1 multigrain french baguette – sliced
- Place cream cheese into Classic Batter Bowl; microwave on HIGH 30 seconds or until softened. Stir in spinach, spices, and lemon juice; mix well.
- Add feta cheese; stir until well blended.
- Finely dice roasted red pepper using Color Coated Paring Knife.
- Line Small Batter Bowl with plastic wrap.
- Sprinkle a few green onions into the bottom of the bowl so they can top the dip.
- Spoon one-third of the cheese mixture into bottom of batter bowl, spreading evenly.
- Top with peppers, forming an even layer.
- Spread remaining cheese mixture over tomatoes.
- To serve, invert dip onto serving platter.
- Remove plastic wrap.
- Serve with toasted baguette slices.
Enjoy with a glass of Pinot Grigio
Okay there isn’t one ingredient on this recipe that I wouldn’t eat by itself. The sum must be greater than its parts!! Looks delicious! 🙂
Haha – shoot a potato across the room?? Wha??
Love the idea of adding roasted red peppers to the dip!
YUM! I love cheese balls and this recipe has so many fun things in it. Never thought to make my own, but I may have to now bc this sounds SO delish!!
That looks delicious! And your little girl is adorable!!! Reminds me of my own…back when she was that age. Not too long ago though since she is only 2. 🙂
This looks PERFECT for a holiday party! I love cheese balls, but hate when they’re loaded with too many full-fat ingredients. I’m definitely going to be taking this one to our Christmas Eve family party 🙂
