When you need a make ahead meal, the crock pot or slow cooker is a great appliance! Just throw your ingredients in and walk away! Perfect for your chicken and Italian lover!

Adapted from an Eating Well recipe and A Year in the Slow Cooker

  • 4 boneless, skinless chicken breast halves
  • 1/2 cup whole wheat bread crumbs
  • 1/4 cup parmesan cheese
  • 1/2 t Italian Seasoning
  • 1/4 t black pepper
  • 1/4 t kosher salt
  • 1 T olive oil
  • 2 beaten egg whites
  • Shredded part skim mozzarella
  • 1 jar of marinara sauce

The Directions:

  1. Spread the 1 olive oil into the bottom of your crockpot
  2. Beat egg whites with a fork in a separate bowl
  3. Mix the bread crumbs with the seasonings and the parmesan cheese in another separate dis
  4. Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings
  5. Put the chicken breast pieces in the bottom of the crock
  6. Sprinkle mozzarella cheese on top
  7. Cover with entire jar of marinara sauce
  8. Close cover and cook on low for 6-7 hours or high for 3-4.
  9. Serve with your favorite pasta.
