For dinner tonight, after my mom and I did a TON of things around my house, I made grilled chicken brie pasta for Brady and our neighbors.
This dish is a mix of
- 1/2 a large round of brie cheese
- 5 tomatoes, chopped
- big handful of chopped basil
- 2 tbsp. minced garlic
- 3/4 c. EVOO
- salt and pepper
whole wheat spaghetti
- Take the rind off the brie and break into little parts.
- Mix bits of brie with tomato, garlic, basil, garlic, EVOO and salt and pepper
- Cook pasta according to direction.
- When the pasta is hot, mix it with the sauce!
- Serve with grilled chicken, shrimp or on it’s own!

Loving this recipe. Was thinking I might put the sauce over spag squash… OR making it into a spag squash bake or sorts.
I would never think to use brie in my pasta. What a great idea!
LOVE pasta dishes like this. Simple is best. I bet the brie made it so yum. Have fun with the peanut flour!
This is a great recipe you can use some variations like Laughing Cow Cheese with your brie.
