This is a great recipe for when you need to make something ahead of time to have in the freezer, or when you need to drop off a healthy dinner to a friend.
Make Ahead: Low Fat – Enchiladas
*adapted from a variety ofย Cooking Light recipes
* 1 (8 ounce) package light cream cheese
* 1 jar salsa
* 1 packet of taco seasoning
* 2 cups chopped cooked chicken breast meat – I used natural canned white meat
* 1 (15.5 ounce) can pinto beans, drained
* 1 can corn, drained
* flour and wheat tortillas
* 2 cups shredded Colby-Jack cheese – 2%
- Mix cream cheese at room temp. with salsa until combined.
- Add corn, drained chicken, taco seasoning and beans to mixture.

Fill tortillas with the mixture, roll and place into the prepared baking dish.

Spread salsa and cheese over the top. Cover with aluminum foil.

Bake for 30 minutes, or until heated through.
If you are freezing this meal – cover with press and seal and then foil.

Actually I decided to make these tonight! Quick question: does the salsa go inside or on top? Or both?
Thanks for this delicious idea Ali! We ate them last night. I didn’t have canned chicken so I just boiled 1 large chicken breast and then shredded it. This was just about enough chicken for the filling. Yum!

How much salsa do you combine with the cream cheese and how much do you put on top with the cheese?

I usually just eyeball it according to what I like and what the people I am making for like. I use about 3/4 of a jar of salsa – maybe 1 cup. Then I put the remaining salsa on top and cover it with the cheese. As for hte cheese – I don’t use much, because I don’t like a lot of cheese but if I make it for company I would use 1-2 cups until the enchiladas are covered!

Thanks for the reply. I’m going to make it for a friend that just had a baby. It’s a great meal she can simply stick in the oven. I’m also going to make it for my family. We love enchiladas!
