Today was a long day at school. I don’t know if it was just getting back into it or the fact the heat was on and it was 83 degrees outside, but I was uncomfortable all day. My back hurt and I just felt bad. It was the first day I was really uncomfortable for the whole day – I know I should not complain, after 39 pretty easy weeks.
So after school I came home and thought about laying down, but how do you lay down when it is summer outside! Instead I kept my plans to walk and catch up with Katie! We did a 3 mile loop (only stopping for the bathroom once!) and I felt much better! It was good to be moving. I think spinning will be in order in the morning to keep my body moving. We will see if I can wake up…
So after our walk, I came home and got set on making dinner. We are using everything in our pantry and fridge until Wednesday because I am not going to the store before then. Tonight we had stirfry and quinoa which was made mostly from pantry ingredients. Here is the random recipe I made up similar to one I have seen in Eating Well Magazine:
Asian Stirfy with Sesame Beef and Quinoa
Beef for Brady:
- 1/2 lb. of beef (lean ground sirloin is what I used)
- 1 tbsp. sesame oil
- 1 tbsp. sesame seeds
- 2 tbsp. teryaki
- 1 tsp. chili garlic sauce (super hot)
Veggies:
- 1 bag of Asian veggies from the frozen section (we had these in the freezer)
- 1 can water chesnuts
- 1 can bamboo shoots
- 1 tiny head of cabbage, shaved
- 2 tbsp. chili garlic sauce (hot!!)
- 2 tbsp. hoisin sauce
- 2 tbsp. soy sauce
- sesame seeds
- In one pan, cook beef and seasonings
- In another pan cook all veggies with seasonings until they are desired a tenderness.
- Serve together or separate – whatever you like!
Now we are headed to bed in the thunderstorm. Hopefully it rains tonight so it is nice for tomorrow when I have recess duty.

I love stir fry! It is such a great go to meal, especially when you are hungry and need some veggies quick!

So I just read the comment you left me, and sap that I am, got tears in my eyes! I am so excited and happy for you and I completely remember all the feelings you are experiencing right now. If you need anyone to bounce any fears or excitement off of, I’m your lady!! And this has NOTHING to do with sesame beef…oops!
