Tonight was my last dinner that I would have to eat alone for a while.  Brady has been out of town(during the week) for the past two weeks and came home tonight.  While he was gone I kept myself busy with friends(girls dinner last night) and fun dinners (St. Patty’s day at Jen’s).  On the few days that I didn’t have plans, I didn’t really feel like cooking.  I made lots of veggie sandwiches and some egg salad wraps.  It was good – but I am ready to have my date back to share meals with and cook for.  Luckily he won’t be gone again for a long time  🙂

So for tonight’s dinner I made a random mix of leftovers from pasta night.  I cooked a little fresh broccoli and some fresh mushrooms to add to the leftover veggies.  Then I topped the veggies with tomato sauce.

This tomato sauce is great!  It is from a little restaurant near my parent’s house and Missy brought it to me last week.  I love the simple ingredient list – tomatoes, onions, EVOO, garlic and salt.

With a side of sprouted sesame toast.

All together with some parmesan.

Then I had some fruit from my Costco run today!

After my doctor’s appointment I did some food nesting. I went to Costco and stocked up on fish (frozen, marinated, individually wrapped), fruit, veggies, burgers, and veggie burgers.   All things we can easily eat when the baby gets here that will be easy to prepare, while still being healthy.  I also stopped at Whole Foods to replenish my quinoa and bulger supplies (and a few other new goodies!).  Both of these healthy grains are easy to make and go with anything!
