Today was a long day! I started with a 5:45 total conditioning class. When they started doing abs- the last 5 minutes of class, I ditched out and ran to Panera for a birthday bagel for Brady. Then I ran home and showered for school. School was good but the kids were a little wild today.
I came home after tutoring and started making dinner. Dinner was picked out by Brady and was pretty simple – Vodka Pasta sauce with chicken for him and a variation over broccoli for me.
Brady’s special birthday plate:
- 1 tbsp. butter
- 1 tbsp. oil
- 1 chopped fine onion
- 1 clove minced garlic
- 2 c. chicken broth
- 1 large can of crushed tomatoes
- 3-4 cubes of frozen basil and garlic
- sprinkle of fresh parm.
- 1/2 c. cream or more if you’d like it thicker
- salt and pepper
- Simmer oil and butter with onions and garlic.
- Add 1 c. chicken broth bring to boil and reduce by half
- Add another 1c. chicken broth and reduce by half
- Add course ground crushed tomatoes – 28-32 oz.
- Add 3 -4 cubes of basil and fresh parm.
- Bring to a bubble then add 1/2 c. or 3/4 c. cream.
- Add salt and pepper
For my sauce I skipped the cream and subbed with fat free half and half. It was an experiment but it worked!! It was delicious! I can’t wait to have it again! I had mine on broccoli instead of pasta.

Dessert was Brady’s favorite – vanilla frozen yogurt with a little milk and some Nesquick mix. This makes like a frosty, smoothie creamy dessert.
We are exhausted from just finishing our taxes! Yay for being done before March!
