How is already 2:00pm? This day has flown by. I had a meeting at school that lasted 3 1/2 hours, so that was the majority of the day. Now on to my hurry -up-and-do-before-school-starts list. Unfortunately it is growing instead of shrinking!
On to the food:
Breakfast: oatmeal with peaches, blueberries and strawberries.
I ate that on the way, but it was a little bit dry….bummer.
I didn’t pack a lunch because I was planning on meeting Brady but that didn’t work out because our meeting went longer than I had thought so I just came home and made tuna and heated up leftover veggies.
Mayoless Tuna Salad
- 1/2 can of white albacore tuna (costco has it for a good deal)
- 2 T hummus
- 1 T Dijon mustard
- DILL relish 🙂 yum!
- salt/pepper/old bay seasoning
I ate it on celery. It was fresh, clean and filling!
I added goat cheese and fresh tomatoes for more flavor!
I never thought to put Old Bay in tuna salad. I’m going to try that tomorrow. Yum.
