I was excited to make dinner tonight after having taking a small hiatus for the past few days.
My day went as planned:
6am workout of 20 minutes on the stepmill and 20 minutes on the elliptical
school
Verizon store – where I did NOT get my numbers transferred to my new replacement phone
home to cook dinner
eat/relax/clean up
It wasn’t too exciting – but it was a good day! For dinner, I decided to make one of Brady’s favorites – crab cakes from Cooking Light. I was in the green bean mood so I made some spicy cashew green beans to go with them. Also, I had some lentils and we both had brown rice. The recipe is posted below!

Super Simple Simmer Lentils
- 1 c. lentils (dry)
- handful of carrots (8 maybe) chopped unto chunks
- 1 onion, cut into pieces
- 2 boullion cubes of any flavor
- 2 garlic cloves, minced
- salt and pepper
- 1 c. water
- Chop onions and carrots and simmer with garlic and boullion cubes.
- Add lentils and water. Boil until lentils are tender.
- Simmer together until water has evaporated.
- Add more water if needed to let lentils become tender.
Tomorrow should be a new and fun recipe!
mmmm you know I love the lentil part of the dish!! I have to have them totally mushy though, so you barely see the individual lentils. I also REALLY like the look of your green beans.
