I made it to the pool for a few hours today and when I got home I was a little hungry but it was pretty close to dinner time, so I decided to skip the snack. Since Brady was still in NYC I decided to take advantage of my meatless dinner freedom and make a feast of veggies.
Summer Veggie Stir-Fry with Marinara
Chop the following veggies:
- asparagas
- zucchini
- broccoli
- tomatoes
- roasted corn (from TJ’s)
- arugula
Stir fried them with a little garlic wine seasoning and minced garlic. When they were almost done I added some marinara and a little fresh parm.
This was really filling and flavorful! *If I were making this for company I would have added some ground turkey meatballs or I would have used this veggie mix as the topping of a flatbread or a pizza.*
With it I had a bowl of very ripe kiwi, honeydew and a peach. I finished it off with the rest of the lemon chiffon. It was early when I ate, so I am planning on wanting a snack later…maybe popcorn?!?

That stir fry looks amazing!! And the fruit is so colorful and eye-pleasing as well…don’t you just love summer’s beautiful produce?! I can’t get over that polka-dot plate either…may I ask where you bought it?! It’s so pretty!!
Thanks! I feel like I can never get enough fruits and veggies! The plates and all of the polka dot dishes are from Target! They are just an extra fun set that I love!
