Last night, I never got really hungry – even after a long shopping trip.  When I did eat dinner it was leftovers = boring!  Brady was out of town and I just wanted something quick and easy.  I had leftover salad and an egg sandwich.

I then decided to bake.  I wanted some thing quick and including blueberries.  I decided to go  semi-healthy and semi-homemade.

Quick Blueberry Sugar Cake

  • 1 package sugar cookie mix
  • 1/2 c. unsweetened applesauce
  • 1 egg
  • 1 c. blueberries

Mix together and bake at 350 for about 20 min.  The cake is actually great!  The key is to not bake it for the full amount or it gets a little rubbery.  By baking it less, it stays moist and gooey making is seem much more unhealthy than it is.  This recipe does included white flour and white sugar from the cookie mix, but no butter or oil – hence the semi-healthy.  If you want to make something people may not know is low-fat – this can be a good recipe.
