A delicious recipe from Chef Scott and the Bumble Bee Foods event.
Chipotle Tuna Samosa
Ingredients:
- 2 cans (5 oz. each) Bumble Bee® Prime Fillet® Gourmet Flavors Albacore Tuna with
- Chipotle and Olive Oil, lightly drained, reserving oil
- 2 tablespoons grated white onion
- 1 tablespoon grated fresh ginger
- ½ cup mashed peas
- 1 teaspoon toasted sesame seeds
- 1 teaspoon dried turmeric
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 box phyllo dough, defrosted
Directions:
- Pre-heat oven to 400 degrees F.
- Combine tuna, white onion, ginger, mashed peas, sesame seeds and all spices in a mixing bowl. Add salt and pepper to season.
- Mix with a fork and shred the tuna. Set aside.
- Follow the directions for the phyllo dough on the box. Note that phyllo dough can dry quickly, so keep unused phyllo dough covered with a slightly damp towel to prevent drying and cracking.
- Place one sheet of phyllo dough on dry surface and brush with the
- reserved tuna oil.
- Repeat this process two additional times for a total of three layers of
- dough.
- Cut the dough lengthwise into three equal long strips, then across the center to create six total dough strips.
- Place one tablespoon of the tuna mixture at the far left hand side of one strip.
- Fold to a triangle shape and repeat the fold until you reach the end.
- Brush each completed samosa with tuna oil and place on a baking sheet. Repeat this process until all ingredients are used.
- Bake for six to eight minutes or until browned and crispy.
