This was the snack of the season at our house this year. I got the recipe from my girlfriend Casey, and we could not get enough of it.
We made it at a girl’s cooking night that I hosted in November.
We made it to share with friends and neighbors for Christmas.
We made it because it was the only thing Kate wanted for breakfast, for weeks.
We keep making it. It’s great to have on hand for a snack for the kids, or a gift for a friend.

Crunchy Almond Vanilla Granola
(Adapted from Foodnetwork.com – Kathleen Daelemans)
Ingredients
- 1 ½ cup brown sugar
- ½ cup water
- 3 T. pure vanilla extract
- 1 t salt
- 7 cups rolled oats
- 2 cups slivered almonds
Directions
- Preheat oven to 275 degrees
- Line 2 cookie sheets with parchment paper
- Combine brown sugar and water in microwaveable bowl. Place in microwave for 3-4 minutes or until sugar has completely dissolved. Add vanilla and salt.
- In a large mixing bowl combine oats, nuts & brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.
- When the mixture comes out of the oven you may choose to add in dried fruit as a finishing touch. When granola has cooled completely, store in an airtight container.
