We are in the full swing of fall lately and I love it. The trees are beautiful and it’s crisp out, perfect for a big sweater.

It is soup weather.

And what is better than a soup that will be ready for you when you want it. A soup you can throw together in a few minutes.

A soup that wants and deserves fun toppings.

Chicken Tortilla Soup

Directions

  1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, and pepper.
  2. Stir in corn, black beans and cilantro.
  3. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
  4. Top soup with anything you’d like! Have fun with it!

We have a fun weekend planned with Em coming to visit tonight! Tomorrow, catch up time with Em + Hallie over a run and coffee, then we are heading to Emmy’s 1st birthday party and then to Hallie’s for a dinner party!

Sunday should be relaxing, catching up on house stuff, some bar building and football.
