So our furnace is still not replaced, but since I have talked about that all week I thought we should instead revisit a recipe I plan to add to my menu for next week. I have made this a few times before but I can’t get enough of it

Curry Roasted Cauliflower

Ingredients

  • 1 head of cauliflower, trimmed and cut into florets
  • 1-2 t. olive oil
  • 1/2 t salt
  • 1 1/2 t. curry powder
  • 1/2 t. garam masala
  • 3 T. chopped onion
  • 2 cloves garlic, minced
  • 2 t. ginger, minced
  • 1 t. lemon zest
  • salt and pepper to taste

Instructions

  • * Preheat oven to 400 degrees.
  • * Put cauliflower florets in a large bowl and drizzle with olive oil, tossing to coat.
  • * Add salt, curry, and garam masala, and again, stir to coat.
  • * Add onion, garlic, ginger, and lemon zest.
  • * Season to taste with stevia, if using, salt and pepper and mix well.
  • * Transfer to a medium baking dish, and bake for 30 minutes, stirring every 10 minutes to ensure even roasting.

Pair this with Indian chicken or lentils, brown rice and some fresh steamed green beans and you are good to go.
