Good morning! Hopefully you are having a good week. Ours has been busy! We are trying to get things ready for Christmas, as I am sure all of you are!

Luckily my little elf just got a computer, so she can keep things straight for us. Between her ability to use the LeapFrog computer and my iPhone, she will be blogging any minute.

Today we are planning on going to playgroup then baking cookies this afternoon. Luckily I already taught class this morning so it’s time to work on the to-do list. Other important items on the list: wrapping presents, finish shopping and tons of cookie baking.

But before we get to cookies, let’s discuss Mama Pea’s fabulous Cracklin Cauliflower. It’s to die for.

Here is her recipe:

Ingredients (serves 4)

  • 1 head of cauliflower, trimmed and cut into florets
  • 1-2 t. olive oil
  • 1/2 t salt
  • 1 1/2 t. curry powder
  • 1/2 t. garam masala
  • 3 T. chopped onion
  • 2 cloves garlic, minced
  • 2 t. ginger, minced
  • 1 t. lemon zest
  • salt and pepper to taste

I skipped the peas – sorry Mama Pea, we didn’t have any.

  • Preheat oven to 400 degrees.
  • Put cauliflower florets in a large bowl and drizzle with olive oil, tossing to coat.
  • Add salt, curry, and garam masala, and again, stir to coat.
  • Add onion, garlic, ginger, and lemon zest.
  • Season to taste with stevia, if using, salt and pepper and mix well.
  • Transfer to a medium baking dish, and bake for 30 minutes, stirring every 10 minutes to ensure even roasting.

Now I need to head to the store for some more cauliflower to make this again. This week we ate it with Indian Chicken (for Brady) and Indian Lentils for me, + brown rice. It was delish. Try it this week before all of the holiday food for something different.
