Who doesn’t love a big bowl of lentil soup on a cold, snowy night? I think lentil soup may be my favorite soup of all time. It’s hearty, usually packed with veggies and always has good flavor paired with it, plus I love how lentils simmer down until a soft yet chewy mush.
So when I recently opened this packet of Nueva Cocina Latin Lentil soup to try, I was excited!
It’s all natural and packed with real foods. It’s amazing to me how nasty canned soups taste after making so much soup from scratch. I used to love canned soup and now so many of them taste sweet and fake. I was happy to see the real foods, low calories and fat and high protein in this packet.
To bulk up the soup, I added 2 ribs of celery (chopped), a cup of leftover cooked lentils and a giant hand of mushrooms, chopped. These veggies went in the pot with the packet of soup and 3.5 cups of water.
When it was done simmering, I had an amazing soup! Great flavors, fiber and protein. I will be purchasing this again. It’s great for an easy weeknight dinner or a soup buffet night!
