The weekend is the perfect time for pancakes. You have time in the morning to focus on breakfast for your family and to sit down and enjoy it! When thinking about what to pair with the Peet’s Coffee I was recently sent as part of Foodbuzz’s Tastemaker program, I couldn’t think of anything better than fresh apple pancakes.

I had just made some homemade applesauce with the apples we picked a few weeks ago, and I knew it would make the perfect addition to my pancake batter. The apples were already softened and sweetened from simmering down. They were cinnamony, too!

Apple Cinnamon Pancakes

  • 1 1/2 c. multigrain baking mix from Trader Joe’s
  • 1/2 c. fresh applesauce
  • 1 tsp. cinnamon
  • 3/4 c. skim milk
  • 1 egg
  • flax – optional
  1. Mix batter with all ingredients.
  2. Cook in a non-stick skillet until cooked through.
  3. Serve with warm applesauce and real maple syrup.

Next time I would add some ricotta cheese. I really need to work at Northstar so I can learn how to make their delicious ricotta pancakes – they would be great with apple sauce!

I am not sure what was better, the coffee or the pancakes. The coffee was fantastic! It was rich and smooth with no bitter flavor. I honestly think I will start buying Peet’s brand!
