My list of things to do today grew. It seemed like the day flew by after I picked up the girls from playing at Patty’s while I taught a spin class at CVF.
I made a few meals to deliver tomorrow and made dinner for tonight, but didn’t get too much else done during “the napping hour”. It’s always a struggle for me to prioritize what I want to get done while the girls take a nap. Today I decided showering was top of the list since I was super sweaty from spinning and could no longer stand myself. I am always torn between doing something that takes concentration at the computer, like writing my article for Babble.com, or running around like a crazy person getting house/dinner stuff done. It’s hard because I don’t get quiet concentration time when the girls are up, but I also get nothing done around the house because they are always “undoing” things.
For example, yesterday Anna unfolded a basket of clothes that I just folded and then tried to put our dry clothes into the dryer with the wet ones. I let this happen, only because I chose to scrub her peach-stained shirt for 2 minutes instead of taking the basket away from her. It’s all about opportunity cost.
Back to the brie pasta. I’m done ranting about everyday life for a minute.
This will make a delicious meal for your family, friends or for leftovers to eat all week! It’s a family favorite that Mrs. Mackey introduced us to a few years ago!
- 3/4 a large round of brie cheese (you could do more or less depending on how much you love brie)
- 5 tomatoes,chopped
- big handful (3/4 cup?) of fresh chopped basil
- 2 tbsp. minced garlic
- 3/4 c. EVOO, you could use a little less or a little more depending on how thick you like the sauce.
- salt and pepper
- 1 lb. of whole grain small penne pasta
- Take the rind off the brie and break into little parts – they don’t need to be uniform.
- Mix bits of brie with tomato,garlic,basil,garlic,EVOO and salt and pepper. This mixture can sit in the fridge or on the counter for a little while to meld together before you use it.
- Cook pasta according to directions.
- When the pasta is hot, mix it with the sauce!
- Serve with grilled chicken, shrimp or on itโs own!
Random Mom Tip of the Day:
When you are trying to get ready and unable to get any makeup on or your hair brushed. Do it in the car. Strap the kids into their car seats, turn on some We Sing Silly Songs and get yourself ready before you pull out of the driveway. The kids will be happy and you will get a little mascara on. ***
***When I talk about putting makeup on, I mean a swipe of mascara for both eyes and a little bit of gloss. I don’t know what it’s like to put on any more than that.
I’ve made this exact same pasta for years minus the EVOO and it comes out delicious.
That’s great Andrea! I am so glad to know that it comes out delicious too because I have not omitted it. I always seem to make it for tons of people when I make it so I like that the EVOO makes more, but I don’t like the fact it adds fat and calories so I will try it your way next time!
It’s so great for serving company because it’s easy to reheat and still tastes great!

I think it is better the next day….also try adding pine nuts (I toast mine) it goes well with the basil!! I got the recipe from my mother in law who had gotten it from her best friend in NY…I love it and haven’t made it in awhile now I’m craving it!!!!!
