The temperatures have gone back to a reasonable degree and we are loving the grill. Never a dull moment here. Between workout classes, selling our house, getting ready for Kevin’s wedding and chasing Anna around, thing have been busy.

This was the perfect dinner for a busy weekday night this week. It used all of the fresh summer veggies around, fresh basil and delicious mozzarella cheese.

Tower of Summer

  1. Grill a basket of your favorite local, summer veggies. Ours included mushrooms, zucchini from our garden, onion, and asparagus.
  2. Chop fresh tomatoes and mozzarella cheese into cubes.
  3. Cook a few servings of brown rice.
  4. Slice fresh basil into ribbons.
  5. Layer things together. Starting with a scoop of brown rice.
  6. Put a generous amount of grilled veggies on top.
  7. Add some fresh caprese salad and drizzle with balsamic and olive oil.
  8. Sprinkle with salt and pepper and enjoy with a glass of New Age.
