I had a few requests for this salad recipe so here it is! This salad came to be after I asked our friend Levi to bring salad to my house for dinner. Levi is the most meat and potatoes guy you will ever meet – I don’t even think I have ever seen him eat a piece of lettuce. He was shocked I asked him to bring salad but the reason was that I had everything else we needed for the dinner and didn’t want to go to the store for salad stuff.
The best part of the story is that I fell in love with the salad he brought (I think he googled a random recipe) and now we make it for family parties and other celebrations! So we call this Levi’s Salad!

Spinach Summer Salad
- 1 large container of baby spinach from Costco
- 1 qt. of strawberries, washed, hulled and cut into small pieces
- 1 c. roasted, sliced almonds
- 1/2 c. crumbled feta
- salt and pepper
Sesame dressing
- 2 tablespoons sesame seeds
- 1/2 cup sugar or sugar sub.
- 1/3 cup olive oil
- 1/4 cup distilled white vinegar
- 1/4 teaspoon paprika
- 1/4 teaspoon Worcestershire sauce
- 1 tablespoon minced onion
Mmmm….
That does sound amazing! I love salads with fruit in them for summer.
